Ingredients

200 g ripe Camembert (at room temp, soft and creamy)
100 g cream cheese (or quark if you can get it)
50 g unsalted butter, softened (2 oz)
¹⁄₂ tsp sweet paprika (Hungarian or mild smoked)
¹⁄₂ tsp caraway seeds, lightly crushed
2 tbsp beer (a Märzen/Festbier is traditional; Helles also works)
Salt & pepper to taste

Garnish:

chives, thin onion rings (you’ll skip onion garnish for your wife 👍)

Instructions

Mash Camembert, cream cheese, and butter together until smooth but slightly rustic.
Mix in paprika, caraway, and beer.
Season with salt and pepper.
Chill for at least 30 minutes to let flavors blend.
Garnish with chives before serving.
