🍄 Potted Mushrooms (British Style)

Cook mushrooms:

Heat butter and oil in a skillet over medium heat.

Add mushrooms, thyme, (and garlic if using).

Cook gently 10–12 minutes, stirring occasionally, until soft and lightly browned.
Season & finish:

Add sherry/wine (if using), cook 1–2 minutes until absorbed.

Season generously with salt and pepper.
Jar & seal:

Pack mushrooms into small sterilized jars.

Pour melted clarified butter over the top to cover completely (this is the preservative layer).

Chill — keeps up to 1 week in fridge.
