  1. Preheat: 300°F (150°C). Line a baking sheet with parchment.

Mix sugars & spices:

  1. In a bowl, combine sugar, brown sugar, cinnamon, cayenne, paprika, and salt.

Coat nuts:

  1. Whisk the egg white and vanilla in a large bowl until frothy. Add nuts, toss to coat.
  2. Add sugar mixture and stir until evenly covered.

Bake:

  1. Spread nuts evenly on the pan. Bake 30–35 minutes, stirring halfway through, until crisp and fragrant.
  2. Cool completely:
  3. They’ll harden as they cool. Break apart any clusters.

Package:

  1. Portion ~⅓ cup per bag or jar. Add a cute tag like “Witch’s Gold — Beware: Addictive Crunch!”
