  1. Trim ends. If stems are thick, split them lengthwise.
  2. Boil water; add salt (about 1 tsp per pot).
  3. Blanch stems 60–90 sec, then add leaves 30–45 sec. Aim tender-crisp, bright green.
  4. Drain well (or quick dunk in cold water, then drain).
  5. Mix oyster sauce + hot water + pinch sugar (+ sesame oil). Spoon over, serve.
