Method

  1. Mix flour + salt, then add water + oil. Knead 2–3 min until smooth.
  2. Rest 10 minutes (covered).
  3. Roll very thin (1–2 mm if you can).
  4. Brush with olive oil, sprinkle salt + spices, dock with a fork.
  5. Bake at 400°F for 8–12 min (flip once) until crisp.
  6. Cool, snap into chips.

Seasoning ideas

  1. Za’atar + sesame (if sesame is ok)
  2. Oregano + garlic powder + lemon zest
  3. Smoked paprika + cumin
  4. Sumac + salt (killer with tzatziki)
