Cook mushrooms:

  1. Heat butter and oil in a skillet over medium heat.
  2. Add mushrooms, thyme, (and garlic if using).
  3. Cook gently 10–12 minutes, stirring occasionally, until soft and lightly browned.

Season & finish:

  1. Add sherry/wine (if using), cook 1–2 minutes until absorbed.
  2. Season generously with salt and pepper.

Jar & seal:

  1. Pack mushrooms into small sterilized jars.
  2. Pour melted clarified butter over the top to cover completely (this is the preservative layer).
  3. Chill — keeps up to 1 week in fridge.
  4. 💡 Serve on toast or as part of a harvest/cheese board.
