  1. Whisk egg white + water until frothy. Toss pecans to coat.
  2. Mix sugar, cinnamon, salt (and cayenne if using). Sprinkle over nuts, toss to coat.
  3. Spread on parchment-lined sheet. Bake at 300°F (150°C) for 35–40 min, stirring every 10 minutes.
  4. Cool completely — they crisp as they cool.
