Cook gently 10–12 minutes, stirring occasionally, until soft and lightly browned.
Season & finish:
4 Add sherry/wine (if using), cook 1–2 minutes until absorbed.
5 Season generously with salt and pepper.
Jar & seal:
6 Pack mushrooms into small sterilized jars.
7 Pour melted clarified butter over the top to cover completely (this is the preservative layer).
8 Chill — keeps up to 1 week in fridge.
