Season Chicken
4 Rub mixture all over chicken, especially under the skin of the breast and thighs.
Roast
5 Place chicken breast-side up on a roasting rack.
6 Roast at 375°F (190°C) for about 1 hour 15 minutes, until internal temp reaches 165°F (74°C) at the thickest part.
7 Halfway through, baste with pan juices.
Finish
8 Let rest 10 minutes before carving.
9 Serve quartered (each guest gets a leg/wing or breast/wing combo — traditional Oktoberfest style).
