Apple Crumble Bars

Ingredients
    Base
  • 1/4 cup butter or margarine (softened)
  • 1/3 cup packed brown sugar
  • 1 cup flour
  • 1 pinch salt
  • Topping
  • 4 - 5 tart apples (such as Grannie Smith)
  • 1/3 cup raisins or dried cranberries
  • 1/4 cup packed brown sugar
  • 1/4 tsp cinnamon
  • 2 tsp cornstarch (using tapioca starch)
  • 1 tbsp lemon juice
  • Crumble
  • 1/3 cup flour
  • 1/3 cup oats
  • 1/4 cup packed brown sugar
  • 2 tbsp butter or margarine (melted)
Instructions
  1. Preheat oven to 350 degrees F.

    In a medium bowl, beat butter and brown sugar until creamy.  Stir in flour and salt until well combined and crumbly.
    Press into the bottom of an 8"x8" pan that has been sprayed with nonstick spray.  Bake for about 12 minutes, until just barely golden around the edges.

    Peel, core, and coarsely dice apples.  You should have 4 - 5 cups.

    In a large skillet, combine apples, raisins (if using), brown sugar and cinnamon.  Cook over medium heat, stirring occasionally, for 5-7 minutes, until apples are tender but still firm.  In a small cup, whisk together the cornstarch and lemon juice.  Add to the apple mixture and cook, stirring constantly for 3 minutes or until thickened.  Spoon evenly over the base.

    In a medium bowl, combine flour, oats, brown sugar, and butter. Stir until well combined and crumbly.  Sprinkle over the apple mixture.

    Bake for 25-30 minutes until golden.  Cool in the pan on a wire rack.

    Makes 12 bars.
