Basic Gazpacho

Ingredients
  • 3 lb ripe tomatoes (peeled, seeded and chopped)
  • 1/2 lb cucumber (peeled, seeded and chopped)
  • 1 cup chopped celery
  • 1/2 cup red pepper
  • 1/2 cup red onion (substitute celery, green pepper, asophida, garlic)
  • 1 tsp chopped garlic
  • 1 tbsp chopped jalapeno pepper
  • 3 tbsp red wine vinegar
  • 1/4 cup good olive oil
  • 12 oz tomato juice
  • salt
  • pepper
  • ground coriander
  • 3 tbsp chopped cilantro
  • 1 lime (cut into slices)
  • 6 stick slices of french bread (toasted)
  • Gazpacho Relish
  • 2 tbsp small diced red pepper
  • 2 tbsp cucumber
  • 2 tbsp tomato
  • 2 tbsp red onion
  • 1 tsp minced garlic
  • 1 tbsp lime juice
  • 1 tbsp olive oil
  • salt
  • pepper
Instructions
  1. Combine all ingredients in a blender or food processor (except bread and limes), and puree until smooth. Transfer to a large bowl and refrigerate for 4 hours. Meanwhile prepare relish.

  2. Gazpacho Relish

    Combine and chill for one hour. Ladle out soup into bowls, top with a large tablespoonof relish, 1 crouton and a slice of lime.
