Canlis (Hoagie) Salad

Ingredients
  • 1 cup Croutons (or 3 bread slices, cubed)
  • 2 clove Garlic, halved
  • 3/4 cup olive oil (or salad oil)
  • 1 lb bacon slices
  • 3 medium tomatoes
  • salt
  • 2 heads of romaine
  • 1 egg
  • 1 tsp freshly ground pepper
  • juice of 1 lemon
  • 1/3 cup grated romano cheese
  • 5 scallions
Instructions
  1. If making croutons, toast bread cubes in 350 degree oven till golden. In a bowl put garlic
    in oil; let stand at room temperature. Cook bacon crisp, then crumble. Chop scallions.
    In a large salad bowl put peeled tomatoes, cut in eighths, sprinkle with salt. Top with
    washed, cut up romaine, and refrigerate all. Pour boiling water over egg in shell; let stand
    two minutes, remove egg from shell, beat up with fork. Into oil, stir pepper, lemon juice, 1/2 tsp. salt, egg.

  2. At serving time:
    At dining table, on top of bowl of romaine, heap bacon, cheese, scallions.Beat uo oil
    dressing (remove garlic) pour over salad; toss well. Add croutons; toss again.
