Carrot and Parsnip Mash

Scrape, wash and slice the vegetables.

Put vegetables into saucepan, barely covering them with cold water; add a little seasoning and 1 tablespoon of butter and cover. Bring to the boil. Reduce heat and simmer about 10 minutes until tender.

When tender, all the water will have evaporated.

Mash vegetables, add remaining butter, check taste of seasoning.

Put into serving dish and serve hot.
