Boil the vegetables – Add the chopped carrots and swede to a large pot of salted water. Bring to a boil and cook for about 20 minutes, or until soft.

Drain well and return to the pot.

Mash – Add the butter and mash until smooth or slightly chunky.

Add seasoning – Stir in the grated ginger, salt, and pepper. If using, add a pinch of nutmeg for extra warmth.

Taste & adjust – If you like a stronger ginger flavor, add a little more, but keep it subtle so it doesn’t overpower the natural sweetness of the carrots and swede.
