Carrot, Swede & Ginger Mash

Ingredients
  • 500 g carrots, peeled and chopped
  • 500 g swede (rutabaga)
  • 50 g butter
  • ½ tsp grated fresh ginger (or to taste)
  • Salt and pepper, to taste
  • A pinch of nutmeg (optional, but complements the ginger well)
Instructions
  1. Boil the vegetables – Add the chopped carrots and swede to a large pot of salted water. Bring to a boil and cook for about 20 minutes, or until soft.
  2. Drain well and return to the pot.
  3. Mash – Add the butter and mash until smooth or slightly chunky.
  4. Add seasoning – Stir in the grated ginger, salt, and pepper. If using, add a pinch of nutmeg for extra warmth.
  5. Taste & adjust – If you like a stronger ginger flavor, add a little more, but keep it subtle so it doesn’t overpower the natural sweetness of the carrots and swede.
