Carrots with Orange-Ginger Glaze

This simple glaze turns the everyday carrot into an elegant side dish that goes beautifully with meats, poultry, grains, or legumes.

Ingredients
  • 1 teaspoon grated orange rind
  • 1/2 tsp salt
  • 1/8 tsp black pepper
  • 3/4 cup orange juice
  • 4 large carrots, peeled and cut diagonally into ½-inch slices (about 5 cups)
  • 1.5 teaspoons unsalted butter or margarine
  • 1 teaspoon honey
  • 1/2 tsp ground ginger
Instructions
  1. In a 10-inch nonstick skillet, combine the orange rind orange juice, butter, honey, ginger, salt, and pepper and bring to a boil. Add the carrots, lower the heat, and simmer, covered, for 5 minutes or until the carrots are slightly tender but still firm.

  2. Raise the heat to high and boil the mixture, uncovered, shaking the pan frequently, for 5 minutes or until the liquid has reduced to 3 tablespoons and the carrots are crisp-tender and nicely glazed.
