  1. Mix ingredients in top portion of a double boiler. Add "cold" water to bottom of double boiler. Insert top portion of double boiler into bottom with a rack to prevent the top portion from being in contact with the bottom of the double boiler. Place on heat and stir slowly until the water boils. Cut heat down to low until the mixture curdles and you can see a cloudy liquid around the sides. Pour the mixture into a pillow case and let hang overnight. (If you let it hang too long the cirek will become dry.)

Note

Taste - You must be able to taste the salt in it or the cirek will be flat. The sugar takes the

edge off the salt.
