In a medium saucepan, combine cranberries, sugar, apple cider vinegar, water, apples, raisins, ginger, cinnamon, allspice, cloves, and salt.

2 Bring to a boil over medium-high heat, stirring occasionally. Reduce heat to medium-low and simmer 15–20 minutes, until the cranberries burst and the mixture thickens slightly.

3 If using chili and/or orange zest, stir them in during the last 5 minutes of cooking.
Adjust & Cool
4 Taste and adjust seasoning — add more sugar for sweetness, vinegar for tang, or spices for warmth. Remove from heat and let cool.
Store
5 Transfer to clean jars. Refrigerate up to 3 weeks, or water-bath can for 10 minutes if preserving long-term.
