Crunchy Apple-Cabbage Slaw

finely shredded green cabbage

crisp
apples, matchsticked
(tossed with a little lemon)

carrot, grated or matchsticked

chopped parsley

2–3 toasted pepitas or sliced almonds
(optional)
Dressing

cup
thick Greek yogurt

apple cider vinegar

maple syrup

Dijon

poppy seeds
Pinch salt & black pepper

1–2 water or cider to thin
Instructions

Whisk dressing until smooth; thin to a pourable consistency.

Toss cabbage, apple, carrot, and parsley with dressing.

Rest 5–10 minutes to lightly wilt. Top with pepitas/almonds.
