Extra-Easy Blueberry Cobbler

My mother and father were fans of a local grocery store chain called "Genuardi", and my mother collected many recipes from them from a series called "Word Worth Eating".

I could not find the recipes online anywhere, so I've entered it here.

Ingredients
  • 3 1/2 cup fresh blueberries (approximately 2 pints)
  • 1 tbsp fresh lemon juice
  • 1 cup flour
  • 1 cup sugar
  • 1 tsp baking powder
  • 1 egg (beaten)
  • 6 tbsp butter (melted)
  • 1/8-1/4 tsp cinnamon
  • 1 tbsp light brown sugar
  • Vanilla Ice Cream, coffee cream, or half and half for topping
Instructions
  1. Preheat oven to 350.  Rinse blueberries and drain.  Place in bottom of 10x6 glass baking dish; sprinkle with lemon juice.  Mix next 4 ingredients with a fork until it resembles coarse corn meal   (There will be some lumps in it).  Distribute flour mixture over blueberries; drizzle top with butter.  Combine cinnamon and sugar; sprinkle on top.  Bake 35-40 minutes.  Do not overbake.  Serve with ice cream, coffee cream, or half and half.  Serves 6-8.

    Sauce will continue to thicken as cobbler cools. "One of the wonderful taste treats of summer!"
