Description

Mom's Italian Vegetable Salad recipe has changed over the years. This version is the most "from basics" version I've seen.

Ingredients
  • 1 1/2 cup Cauliflower Florets
  • 1 Small Carrot (chopped into 1/8 inch pieces)
  • 1/2 Small onion (substitute extra garlic, Asophida Powder, celery stalk) (chopped into 1/8 inch pieces)
  • 2 clove Garlic (smashed)
  • 2 Ribs of Celery (chopped into 1/2 inch pieces)
  • 1/2 cup Pimento stuffed green olives (roughly chopped)
  • 1/4 cup Pepperoncini pepper
  • 1 cup White Vinegar
  • 1/4 cup Olive Oil
  • 2 tbsp salt
  • 2 tbsp Sugar
  • 1/8 tsp Red Pepper Flakes
  • 1/8 tsp Oregano
  • 1 Bay Leaf
  • 5 tsp Black Peppercorns
Instructions
  1. Toast bay leaf and pepper.  Combine vinegar, olive oil, salt, sugar, pepper flakes, and oregano in a pot and bring to simmer.  Add bay leaf and peppercorns.  Steep 5 minutes.

  2. Strain bay leaf and peppercorns.  Reserve liquid.  Place vegetables in a 1-quart container.  Pour liquid over vegetables and let sit for two days before using.
