Why It Works:
- Ginger deepens the richness of the slow-cooked beef.
- Ale adds a malty depth, making it a proper British comfort dish.
- 750 g stewing beef (e.g., chuck or brisket)
- 1 tbsp flour
- 1 tbsp grated fresh ginger
- 1 tsp Worcestershire sauce
- 500 ml dark ale (e.g., Old Speckled Hen, Newcastle Brown)
- 1 tbsp tomato paste
- 2 carrots, chopped
- 2 potatoes, chopped
- 2 bay leaves
- 1 tsp thyme
- Salt & pepper
- Toss the beef in flour, salt, and pepper. Brown in a pan.
- Add ginger and cook for 1 minute until fragrant.
- Pour in ale, Worcestershire sauce, and tomato paste. Stir well.
- Add carrots, potatoes, bay leaves, and thyme.
- Simmer on low for 2–3 hours until the beef is tender.
