Golden Rice Salad

Description

Originally from "A Louisiana Sampler", modified for less oil and more veggies by the dear lady.

Ingredients
  • 1/4 cup scant of salad oil
  • 1 1/2 tsp salt
  • 1 cup chopped ripe olives (black & green)
  • 2 hard boiled eggs
  • 2 cup chopped celery
  • 3/4 cup chopped pickles (pickled veggies)
  • 1/2 cup mayonnaise
  • 2 tbsp mustard
  • 2 tbsp Vinegar
  • 1/8 tsp red pepper
  • 4 1/2 cup cooked rice
Instructions
  1. Blend oil, vinegar, salt, and pepper.  Pour over hot cooked rice.  Toss and set aside to cool.  Add remaining ingredients; toss and chill thoroughly.

    Parsley and green onions may be added.
