Cabbage and Potato Dumplings

Ingredients
    Cabbage
  • 1 large head of cabbage (cut fine)
  • 2 tbsp bacon drippings or oil
  • 1/2 cup butter
  • 1/2 tsp salt
  • 1 medium onion (substitute)
  • dash of pepper
  • Dumplings
  • 3 medium potatoes (pared and grated)
  • 1 tsp salt
  • dash of pepper
  • 1 egg beaten
  • 2 cup flour
Instructions
    Cabbage
  1. Sauté chopped onion in shortening.  Add cabbage and seasonings.  Cover and fry over low heat until tender. 

  2. Dumplings
  3. Grate potatoes.  Add egg, seasonings, and flour.  If dough is stiff, add a little water.  Drop by 1/2 teaspoon into boiling water.  Boil until dumplings come to top, about 10 minutes.  Drain and rinse with warm water.  Mix with cabbage mixture.
