Jewish Apple Cake

I remember my mother talking about wanting this recipe from my grandmother, and finally getting.  I myself have been seeking it in my mother’s records, only to find it tucked away (unindexed) in my grandmother’s recipe box.

Ingredients
    Topping
  • 6-7 apples
  • 2 tsp cinnamon
  • 4 tbsp sugar
  • Cake
  • 3 cup flour
  • 3 tsp Baking Powder (Use Cream of Tartar (1/2 tsp) + Baking Soda (1/4 tsp) per if need be)
  • 1 1/2 cup sugar
  • 4 eggs
  • 1 tbsp Vanilla
  • 1 cup oil
  • 1/4 cup orange juice (or juice from an orange)
Instructions
  1. Peel & slice apples. Mix with cinnamon and sugar. Set aside.

  2. Beat eggs in a large bowl.  Add vanilla, oil, and orange juice.

  3. Add dry ingredients and mix well.  The batter will be very stiff.  Fold in apples, saving about 1 cup of apples for top.  Spoon batter into greased tube pan.

  4. Top with reserved apples & broken walnuts if desired.   Bake at 350 degrees F for 1 hr & 15 minutes or until done.
