  1. Take a large bowl, place chicken pieces in it, add remaining ingredients and then stir until coated.

    Cover the bowl with its lid, place it in the refrigerator and let it rest for a minimum of 45 minutes.

    When ready to cook, take a griddle pan, place it over medium-high heat, grease it with oil and let it preheat.

    Thread the marinated chicken pieces on skewers, place them on the griddle pan and then cook for 4 to 5 minutes per side until thoroughly cooked and developed grill marks.

    Meal Prep: Let the chicken skewers cool completely, then divide them evenly among six meal prep containers and cover them with a lid. Store the container in the refrigerator for up to 5 days or freeze for up to 1 month.

    When ready to eat, thaw the container overnight in the refrigerator, microwave for 2 to 3 minutes until hot, and then serve.
