  1. Prep dry mix:

    In a large bowl, whisk together flour, baking powder, baking soda, salt, sugar, lemon zest, and crushed lavender.

  2. Cut in butter:
    Use a pastry cutter or fingers to rub butter into dry mix until it looks like coarse crumbs.
  3. Add liquids:
    Stir in cream, vanilla, and optional lemon juice just until dough comes together (don’t overmix).
  4. Shape:
    Turn dough onto a floured surface. Pat into a circle about ¾” thick. Cut into wedges or use a round cutter.
  5. Chill (optional):
    Chill scones 15–20 minutes for flakier texture.
  6. Bake:
    Brush tops with cream. Bake at 400°F (200°C) for 15–18 minutes until golden on top and edges.
  7. Glaze (optional):
    Mix powdered sugar and lemon juice. Drizzle over warm scones and garnish with extra lavender if desired.
