Prep dry mix:
In a large bowl, whisk together flour, baking powder, baking soda, salt, sugar, lemon zest, and crushed lavender.
2 Cut in butter:Use a pastry cutter or fingers to rub butter into dry mix until it looks like coarse crumbs.
3 Add liquids:Stir in cream, vanilla, and optional lemon juice just until dough comes together (don’t overmix).
4 Shape:Turn dough onto a floured surface. Pat into a circle about ¾” thick. Cut into wedges or use a round cutter.
5 Chill (optional):Chill scones 15–20 minutes for flakier texture.
6 Bake:Brush tops with cream. Bake at 400°F (200°C) for 15–18 minutes until golden on top and edges.
7 Glaze (optional):Mix powdered sugar and lemon juice. Drizzle over warm scones and garnish with extra lavender if desired.
