Marinated Olives + Nuts
(Mediterranean snack bowl)
Ingredients

cups
mixed olives
(Kalamata + Castelvetrano is a great combo)
1
cup
nuts: whole almonds, walnuts, or pistachios
(or a mix)

tbsp
extra-virgin olive oil
1
strips
1–2 orange zest
(or lemon zest)
2
cloves
garlic, lightly smashed
(or finely sliced)
1
tsp
1–2 chopped rosemary
(or 1 tsp dried)
Optional: thyme or oregano

tsp
red pepper flakes
(optional)
1/2
tsp
smoked paprika
(optional, nice warmth)
Black pepper to taste
Instructions
Method (room temp)

If nuts are raw/untoasted, toast them in a dry skillet 3–5 minutes until fragrant.

In a bowl/jar, combine olives + nuts.

Add olive oil, zest, juice, garlic, herbs, and spices. Stir/shake to coat.

Let sit 30–60 minutes (or overnight in the fridge). Serve at room temp.
Method (warm version)

In a small pan, warm olive oil with garlic + herbs + pepper flakes 30–60 seconds (don’t brown the garlic).

Add olives + nuts, toss just until warmed through, 1–2 minutes.

Finish with citrus zest/juice and serve warm.
