Ingredients
  • 2 2/3 cup Penne Rigate (uncooked)
  • 1 cup cucumber (quartered, sliced)
  • 7 oz Roasted Red Peppers (drained and chop)
  • 1 cup Chopped Sweet Red pepper (Alternative to roasted red peppers)
  • 3/4 cup crumbled feta cheese
  • 1/2 cup sliced green onion (celery, asopheda, and chive substitute)
  • 1/3 cup Kalamata olives (chopped)

  • 1/2 cup Italian dressing
  • 3 tbsp fresh lemon juice
  • 1 tsp dried oregan leaves
  • 1/4 tsp ground cinnamon
Instructions
  1. Cook pasta according to package directions; drain.  Rinse with cold water to cool quickly; drain well.  Meanwhile, prepare GREEK DRESSING; stir in cooled pasta and remaining ingredients.  Cover; refrigerate.  Garnish with fresh mint, if desired.
