Mix the prepared herb infusion lemon juice or vinegar, food coloring (if desired), and pectin & Butter. Mix well. Put over highest heat, stirring constantly until mixture comes to a full rolling boil that cannot be stirred down. Mix in sugar. Continue to boil hard for exactly 1 minute. Remove from heat. Stir and skim off foam with metal spoon. Immediately pour into hot, sterilized jars with herb sprigs in bottom of each. Seal. Yield approximately 40 oz.
