Mint Jelly – Recipe Using Powder Pectin

Ingredients
  • 3 cup fruit juice or water (mint infusion or apple juice)
  • 1 cup fresh herb (mint leaves)
  • 2 tbsp fresh lemon juice
  • 1 package powdered pectin (1 1/4 oz)
  • 4 cup sugar
  • 1/2 tsp butter
  • 1 sprig fresh herb for each jar
  • 3 drop food coloring (optional)
Instructions
  1. Mix the prepared herb infusion lemon juice or vinegar, food coloring (if desired), and pectin & Butter.  Mix well.  Put over highest heat, stirring constantly until mixture comes to a full rolling boil that cannot be stirred down.  Mix in sugar.  Continue to boil hard for exactly 1 minute.  Remove from  heat.  Stir and skim off foam with metal spoon.  Immediately pour into hot, sterilized jars with herb sprigs in bottom of each.  Seal.  Yield approximately 40 oz.
