Mom’s Pennsylvania Red Cabbage

Description

From my mother's recipe box... based on Gedunstetes Rotkraut in Rotwein.

Ingredients
  • 2 tbsp salad oil or bacon drippings
  • 4 cup red cabbage (shredded)
  • 2 cup cubed unpared apple (2 medium)
  • 1/4 cup brown sugar
  • 1/4 cup vinegar
  • 1/4 cup water
  • 1 1/4 tsp salt
  • 1 dash pepper
  • 1/2 tsp caraway seed
Instructions
  1. Heat oil in skillet; add remaining ingredients.  Cover tightly; cook over low heat, stirring occasionally.  For crisp cabbage, cook 15 minutes; allow 25 to 30 minutes for the old-fashioned kind.  Garnish with raw unpared apple rings.
