Mom’s Pineapple-Cranberry Upside Down Cake

A recipe from Mom's recipe box, originally from Millie Thomas.

Ingredients
  • 1/2 cup butter
  • 1 cup Brown Sugar (firmly packed)
  • 1/2 cup pecan or walnut halves
  • 1 can pineapple chunks in juice (drained, juice reserved)
  • 1 yellow cake mix (Rachel Ray's recipe)
Instructions
  1. Melt Butter ina 13x9 baking pan in a 350 degree oven.

  2. Sprinkle brown sugar, nuts, cranberries, and pineapple.

  3. Add water to the reserve juice to equal the amount of liquid specified in cake mix.

  4. Prepare cake mix as directed.

  5. Spread cake mix over the fruit.

  6. Bake at 350 for 35-45 minutes or until cake tests done.  Cool 5 minutes and invert unto large serving dish.  Can be frozen.
