New England Clam Chowder

Ingredients
  • 1/4 lb Salt Pork (cubed)
  • 2 small onions (minced (substitute celery, hing, and chives))
  • 1 qt shucked clams
  • 6 - 8 medium potatoes
  • water (clam h2o)
  • salt
  • 1 -2 cans of evaporated milk
  • 1/2 tsp pepper
Instructions
  1. Fry pork til golden - add onion & cook 2-3 minutes;  arrange pot and hard parts of clams in layers over onions cover c cold H2O - heat to boiling & simmer til pot are soft

     

  2. add rest of clams seasoning & milk - heat to boiling, add crackers
