Pecan Tarts

Ingredients
    Crust
  • 1 cup butter
  • 6 oz cream cheese
  • 2 1/2 cup sifted flour
  • Filling
  • 5 - 6 dozen pecan halves
  • 1 cup pecans (chopped)
  • 4 eggs
  • 2 cup brown sugar
  • 4 tbsp melted butter
  • 1 tsp vanilla
  • 1 tsp salt
  • 1 cup light corn syrup (Substitute Golden Syrup)

    Crust
  1. Work together and form roll 2" in diameter. Wrap roll in wax paper and refrigerate.

     

  2. Filling
  3. Beat eggs, add sugar and syrup. Add remaining ingredients except pecan halves, and mix. (Try not to beat air into mixture.)

  4. Cut crust roll into approximately 1/4" slices and press into 1 1/2" muffin tin to form shell.

  5. Add chopped pecans to about 1/3 full then some filling mixture to about 2/3 full (~1 Tbsp.) and place pecan half on top. Bake at 350ᵒF for 20 minutes. Try to remove from tin while still warm.
