Pesto ala Genovese

Ingredients
  • 2 1/4 cup fresh basil leaves
  • 3 clove garlic
  • 1/4 cup pine nuts and/or skinned walnuts
  • 1/4 tsp salt
  • 6 tbsp olive oil
  • 1/2 cup grated Parmesan Cheese
Instructions
  1. Pound basil, garlic, salt, and nuts in a mortar and pestle (where the name comes from) or in a blender at low speed, until a thick paste forms.  While mixing, slowly add olive oil then cheese.  

    Pesto is the classic green sauce for spaghetti.  Mix 2 TB pesto with 1TB butter and 1TB water from boiling pasta for each 2 oz serving.  Or combine with tomatoes and Italian Sausage for spaghetti.  Pesto also tastes great on baked potatoes, broiled fish, and omelets.
