Description

Makes enough for a sheet pan 10.5" x 15.5" x 1" high.

Ingredients
    Filling:
  • 2 can crushed pineapple
  • 1 cup sugar, cane
  • 2 tbsp lemon juice
  • 1/4 tsp salt
  • 3 tbsp potato starch (*original recipe had corn starch)
  • 1/2 cup water
  • Crust:
  • 1 cup shortening
  • 1 cup sugar
  • 2 eggs
  • 1/2 cup sour milk or buttermilk
  • 4 1/2 cup flour, all-purpose
  • 1 1/2 tsp baking soda
  • 1 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1 tsp vanilla
Instructions
    Prepare filling
  1. Combine ingredients, cook until thick, then cool.

  2. Make crust
  3. Combine in large bowl; sugar, flour, baking soda, baking powder, and salt.

  4. Cut in shortening until it is in little pieces

  5. Add eggs, milk and vanilla and blend well

     

  6. Divide dough in half.

  7. Roll out one half between sheets of wax paper and line bottom of sheet pan.

     

  8. Add filling. 

     

  9. Roll out remaining half of dough between waxed paper and carefully place on top of filling.

     

  10. Seal edges and bake at 350 degrees F for 30 minutes.
