Boil: In a pot, bring water and sliced ginger to a boil.

Simmer: Reduce heat and simmer for 10–20 minutes, depending on how strong you want the flavor.

Strain: Remove from heat and strain out the ginger.

Sweeten: Stir in honey or sugar while warm.

Add Citrus (Optional): Squeeze in calamansi or lemon juice if desired for extra brightness.

Serve:

Hot in mugs for a traditional feel.

Iced: Let cool, pour over ice, and garnish with a slice of calamansi or lemon.
