Salabat (Filipino Ginger Tea)

fresh ginger, sliced thin
(about a 2–3 inch piece)

water

2–3 honey or brown sugar
(adjust to taste)

Juice calamansi
(or substitute with lemon/lime)
Instructions

Boil: In a pot, bring water and sliced ginger to a boil.

Simmer: Reduce heat and simmer for 10–20 minutes, depending on how strong you want the flavor.

Strain: Remove from heat and strain out the ginger.

Sweeten: Stir in honey or sugar while warm.

Add Citrus (Optional): Squeeze in calamansi or lemon juice if desired for extra brightness.
