Savory Cheddar & Broccoli Baked Oatmeal

Prep the broccoli:

If using fresh:

Toss florets with a splash of oil and a pinch of salt and spread on a sheet pan. Roast at 400°F for ~10 minutes until bright green with a few browned spots, or Steam/microwave until just crisp-tender.

If using frozen:

Thaw, squeeze out excess water with a towel, and roughly chop.
Mix the wet ingredients:

In a large bowl, whisk together:

• Eggs

• Milk (and stock if using)

• Yogurt or sour cream

• Melted butter/oil
-
• Dijon, salt, pepper, smoked paprika, garlic powder

Taste the mixture (before adding eggs if you prefer) for salt and seasoning; it should taste a little more seasoned than you’d want in a glass of milk.
Add oats & goodies:

Stir in:

• Rolled oats
-
• Roasted/steamed broccoli

• 1 cup of the shredded cheddar
-
• Your protein of choice (or keep it veg-only)

• Let this sit for 5–10 minutes so the oats start to hydrate – nice moment for stream chat.
Pan & top:

Grease your baking dish.

Pour in the oat mixture, smoothing the top.

Sprinkle with the remaining ½ cup cheddar.
Bake:

Bake at 375°F for about 30–40 minutes, until:

The center is set (no jiggly liquid),

The edges are lightly browned,

Cheese is melted and golden in spots.

Let rest at least 10 minutes before cutting so it slices cleanly.

Cut into squares or wedges.
