Scottish Oatcakes Recipe

  1. Preheat your oven to about 350°F (175°C).
  2. In a bowl, mix the oatmeal and salt together.
  3. Add the melted butter or oil and stir it in.
  4. Gradually add hot water, a tablespoon at a time, until it forms a firm dough that holds together but isn’t sticky.
  5. Roll out the dough on a lightly floured surface (or just a surface dusted with a bit of oatmeal) to about 1/4 inch thick.
  6. Cut into rounds or wedges.
  7. Bake on a baking sheet for about 15 to 20 minutes until they’re crisp and lightly golden.
  8. They’ll keep well in an airtight container for a few days, so you can definitely make them ahead.

Note

Just before serving, top each oatcake with a little dollop of cream cheese or a similar spread.

Lay a piece of smoked salmon on top. If you like, add a little fresh dill or a twist of black pepper.
