Shaved Cucumber, Apple, and Radish Salad with Mustard-Yogurt Dressing

Ingredients
    Salad:
  • 1 English cucumber, thinly sliced
  • 1 crisp apple, thinly sliced or matchsticked
  • 4 radishes, thinly sliced (up to 6)
  • 2 cups arugula, watercress, baby spinach, or mixed greens
  • 2 tbsp chopped parsley or dill
  • Optional: toasted walnuts
  • Optional: a little crumbled feta or sharp cheddar
    • Mustard-yogurt dressing:
  • 1/2 cup Greek yogurt
  • 1 tbsp whole-grain mustard
  • 2 tsp Dijon mustard
  • 1 tbsp lemon juice or cider vinegar
  • 1 tsp honey
  • Black pepper
  • Pinch of salt
  • 1 tbsp water to thin (up to 2)

    Dressing:

    Mix all the dressing ingredients together and whisk until pourable.

    Mix all the salad ingredients together, add dressing just before serving so the apple and cucumber stay crisp, and toss .
