Smashed Cucumber Salad

Ingredients
  • 2 English Cucumbers
  • 2 tbsp Chopped Red Chilis
  • 2 tbsp Minced Garlic
  • 1/3 tbsp Salt
  • 1 tbsp Light Soy Sauce
  • 2 tbsp Black Vinegar
  • 1 tbsp Sesame Oil
  • Cilantro Stems
  • Peanuts
  • 2 tbsp sugar
Instructions
  1. Smash the cucumbers on their side to split and slightly flatten.  Quarter lengthwise and chop into bite-sized chunks.  Sprinkle with sugar, and let sit in a colander to let juices drain off.

  2. Combine remaining ingredients with cucumbers in a bowl, and let get happy for a bit.  Enjoy.
