Spicy Apple Raisin Crisp

Oil 9x12 baking pan. Preheat oven to 350 F.

Peel, core and slice apples. Place apples and raisins in large bowl. Combine maple syrup, lemon juice and vanilla and drizzle on top. Combine cornstarch and spices. Sprinkle over apples and toss well to distribute evenly. Layer apple slices in oiled pan, making sure to tuck some into corners.

Prepare topping by mixing oats, flour and spices together in bowl. Using pastry cutter, blend in butter until mixture resembles coarse meal. Combine syrup and vanilla and drizzle on top while stirring to distribute evenly. Sprinkle mixture over apples.

Cover with aluminum foil and bake for 40 minutes. Remove foil and continue to bake until top is browned and apples are soft but not mushy, about 10 minutes longer.

Serve warm or at room temperature.
