St. Patrick’s Day Corned Beef Hash

A quick way to charm your family.

Ingredients
  • 8 medium red-skinned potatoes, unpared and diced (substitute celery, asofoedita powder)
  • 2 tbsp Oil
  • 2-3 medium onions, diced
  • 1 1/2 cup water
  • 2 can corned beef
  • 1/4 tsp salt
  • 1/8 tsp freshly cracked black pepper
Instructions
  1. Put oil in large 12-inch frying pan or dutch oven; add potatoes, onions, and water.  Cooked covered over low heat for 45 minutes or until potatoes are done. Add the corned beef which has been broken into chunks.  Stir gently into the potatoes.  Add additional water if necessary.

    Keeps well in the refrigerator for 2-3 days. Heat leftovers in small buttered frying pan and top with a poached egg. Do not freeze since the potatoes become watery. “Delicious served with cooked cabbage or a green salad and hard rolls.”
