Summertime Tomato Pie

Ingredients
  • 1 9-inch pie shell, baked
  • 1 egg white, slightly beaten
  • 3-4 Medium tomatoes, peeled and sliced
  • 1/3 - 1/2 cup mayonnaise
  • 1/4 cup freshly grated Parmesan cheese, divided
  • 1/8 tsp dry mustard
  • 1 tsp lemon juice
  • 1/2 tsp fresh basil (or 1/4-1/2 tsp dried basil)
  • 1/8 tsp cracked pepper
  • 1/8 tsp garlic powder
Instructions
  1. Preheat oven to 350.  Brush sides and rim of pie shell with beaten egg white; prick crtust and sides with tines of a fork.  Bake at 350 for 10-12 minutes until light and golden.  Do not overcook.  Let crust cool.  Fill crust with tomatoes.  Mix mayonnaise with 3 tablespoons cheese, dry mustard, lemon juice, basil, pepper, and garlic powder; spoon over tomatoes.  Top with remaining cheese.  Bake at 350 for 20 minutes or until top is golden brown.  Serves 6-8 as a vegetable or 4-6 as a meat substitute.

    Low-fat mayonnaise can be used in this recipe. If the pie crust puffs up during baking, do not push down; it will settle on its own. PIE CRUST HINT: Beaten egg while acts as a sealer on the pie crust and prevents a soggy crust. "Extra delicious when made with summer tomatoes!"
