Tangy Fruit Kabobs

Topped with Poppy Seed Dressing

Ingredients
    Kabobs
  • 1/2 to 1 cup Fresh Pineapple
  • 1/2 to 1 cup melon cubes (canteloupe, honeydew, or other melon)
  • 1/2 to 1 cup whole small strawberries
  • 1/2 to 1 cup peeled kiwi slices
  • 6 to 10 small bamboo skewers
  • 6 to 8 lettuce leaves or sprigs of mints
  • Dressing
  • 1 juice of medium fresh lemon
  • 1/4 juice of fresh lime
  • 1 envelope of sugar substitute (No)
  • 2 tbsp corn oil (use vegetable oil)
  • 1/8 tsp dry mustard
  • 1/2 to 1 tsp poopy seeds
  • 1/4 cup honey
Instructions
  1. Prepare all fruits and thread on skewers.  Place on a tray covered with triple thickness of paper towels; cover with plastic wrap until ready to serve.  When ready to serve, decorate a plate with lettuce leaves or mint; tope with fruit kabobs.  Drizzle each kebob with 1-2 teaspoons of dressing.  Serves 6-10 depending on size of kebobs and amount of fruit used.

  2. Poppy Seed Dressing

    Place all ingredients except poppy sees in blender jar.  Blend 2-3 minutes.  Pour into small jar and add poppy seeds.

    Use any of your favorite fruits for these kebobs. "Serve for salad or dessert!"
