Wash, core and quarter apples (don't peel). Combine apples and apple juice in lightly oiled crock pot. Cook on low (10 to 18 hours) or high (2 to 4 hours) until tender.

Put fruit through food mill to remove peel

Measure fruit and return to crock pot.

For each pint of sieved, cooked fruit add 1 cup sugar, 1 teaspoon cinnamon, 1/2 teaspoon allspice and 1/2 teaspoon cloves.

Stir and cook on high for 6 to 8 hours, stirring every 2 hours.

Remove cover after first 3 hours to let it cook down. Add sauterne for last hour of cooking.

Spoon into hot sterilized jars. Can in boiling hot water bath for 10 minutes.

Makes approximately 5 -1/2 pint jars ( jelly jars under canning supplies in most supermarkets) .
