  1. Whisk ½ cup mix with 2 cups cold milk.
  2. Beat with a whisk or electric mixer for 2 minutes until thickened.
  3. Chill for at least 5–10 minutes before serving.
  4. (If using arrowroot or potato starch, it won’t “gel” quite as firmly as commercial instant pudding, but chilling firms it nicely.)
